Where is it ?
Ecuador is bordered by Colombia on the north, Peru on the east and south, and by the Pacific Ocean to the west. It is one of only two countries in South America, along with Chile, that do not have a border with Brazil. The country also includes the Galapagos Islands in the Pacific.
When I think of Ecuador, the one thing that springs to mind is the sensational mid 90‘s Euro pop hit from Sash with the same name. Surely you know it ? If not here you go
Ecuador was one of the countries on my list that I had been looking forward to, as the food is very similar to Mexican. For inspiration I found a site dedicated to Ecuadorian food by Layla Pujol who, was born in Ecuador and now lives in the States. I decided to make Empanadas, which are basically like little pasties.
For the filling I used beef instead of turkey, as the filling was cooked the day before the mix was completely cold which made it easier to fill.
I always thought that you used puff pastry for empanadas but, it turns out is a simple dough mix which, was so easy to make. I served them with homemade Chimichurri sauce.
This is something of a stable in our house that we make in large batches and have a jar on the go. Recipe below:
5 long red chillies
10-12 garlic cloves, peeled
2 large handfuls of flat leaved parsley
1 heaped tsp dried oregano
1 heaped tsp dried thyme
2 tsp sea salt flakes
5 tbsp red wine vinegar (more if required)
4-5 tbsp extra virgin olive oil
Place all the ingredients in a food processor and blend until the mix reaches your desired consistency.
Season to taste.
I think I need to work on the presentation of my empanadas but they got the thumbs up from the other half, so that’s all that matters.
