Whether you’re making a cake for someone’s birthday or just as a treat over the weekend. This is my all time favorite chocolate cake recipe. It’s so simple to make and always results in a wonderfully moist cake.

With just a few simple additions this cake can look really impressive . For that extra ‘wow’ factor add some truffles (see photo above and recipe below) or pipe some of the icing around the top of the cake, like on this one.

Ingredients for the cake
1 vanilla pod
250ml milk
250g plain flour
375g caster sugar
100g cocoa powder
1½ tsp baking powder
1½ tsp bicarbonate of soda
2 eggs
125ml olive oil
250ml boiling water

For the icing

100g unsalted butter
175g dark chocolate (chopped))
300g icing sugar
1 tbsp tablespoon syrup
125 ml greek yogurt
1 tsp vanilla paste

Preheat the oven to 180C/350F/Gas 4. Grease and line two 20cm/8in sandwich tins. Split the vanilla pod by slicing it in half. Pour the milk in a pan and add the vanilla pod. Bring the milk to a slight boil and leave to cool. Fish out the vanilla pod.

In a large bowl add the cake ingredients (Including the milk but not the boiling water).
Beat the mixture until smooth and well combined. Add the boiling water to the mixture, a little at a time. The cake mixture will now be very liquid but don’t worry about this.

Pour the cake batter between the sandwich tins and bake for 25-35 minutes, or until a skewer inserted into the centre of the cake comes out clean. Remove the cakes from the oven and allow to cool completely, still in their tins, before icing.

To make the icing
Melt the butter and chocolate in a good-sized bowl (I usually do this in the microwave) and cool. Add the golden syrup to the cooled chocolate mixture, followed by the yogurt and vanilla. When all this is combined sieve in the icing sugar and mix.

There should be enough icing for the whole cake (top and sides).
